Personally, I enjoy vegetable salad and had been taking them particularly because of my high blood sugar.

In Taipei, they have a crunchy and refreshing small side dish that is very appetizing and easy to prepare. This is the “Cucumber Salad”.

Since that post was written in Chinese and many of my friends cannot read Chinese, I will attempt to translate the recipe into English and hope my English-reading friends will enjoy it.

Note: I have modified slightly the recipe based on a very good Taiwanese friend’s advice.

Here it is:

This “Crunchy and Refreshing Cucumber Salad” is different from other cucumber salad in that it is crisp in taste and is very appetizing. It is suitable for all ages and is a very suitable side dish.

Ingredients:
3 pieces of small cucumber
3 cloves of minced garlic
1 fresh red chili pepper, sliced
1 teaspoon salt
1 teaspoon sugar
1 tablespoon white vinegar

Directions:
1) Cut the cucumber into thin slices.
2) Put the cucumber slices in a bowl and mix it with the salt and sugar.  Set it aside for 10 minutes.
3) Rinse the salt and sugar off the cucumber slices by running it under cold water.
4) Placed the rinsed cucumber slices in a bowl and mix it with the white vinegar, minced garlic, red chili pepper.
5) Chill before serving.
